SECURITY.md: supported versions match the published policy

The supported-versions table said older releases never get fixes. It now matches the policy published on docs.inbuxa.org/versions/ (inbuxa.org #110): the previous series gets three months of security fixes after a new one ships, 2026.x until three months after 27.1, release candidates are replaced by the next one.

Merge after inbuxa.org #110 is deployed, so the link resolves.
