Adds an Install section: the published amd64/arm64 image at registry.coffeylabs.org/jcoffey-dev/mailsink with Compose and with plain docker run, a note that the published image carries the default settings (build your own to change them), and a one-line fetch for egress-lockdown.sh. The old Run section becomes Build your own and Use.

Tested: the anonymous raw download of the script matches the repo; the Compose variant and the docker run command as written both start the published image, create the expected bridge and accept mail (on a different host port).
